My menu for last weeks was grape, grape and grape. This weeks it will have a big change, from grape to banana. Let's see what I will make with 4 lbs of bananas left over in my kitchen.
Banana and Nut Bread

1/2 cup butter, softened

1-1/2 cups sugar

2 eggs
- 2 cup mashed ripe bananas

1/3 cup milk

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup chopped pecans or walnuts

In a large bowl,
cream butter and sugar until light and fluffy. Add eggs, one at a time,
beating well after each addition. Stir in the bananas, milk and extract.
Combine the flour, baking soda and salt; gradually add to banana
mixture just until moistened. Fold in nuts.

Pour into a loaf pan. Bake at 325° for 45-50 minutes. Cool for 15 minutes
before removing from pan to a wire rack.
