My menu for last weeks was grape, grape and grape. This weeks it will have a big change, from grape to banana. Let's see what I will make with 4 lbs of bananas left over in my kitchen.

Banana and Nut Bread

Ingredients

  • 1/2 cup butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 2 cup mashed ripe bananas 
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chopped pecans or walnuts

Directions

  1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in the bananas, milk and extract. Combine the flour, baking soda and salt; gradually add to banana mixture just until moistened. Fold in nuts.
  2. Pour into a loaf pan. Bake at 325° for 45-50 minutes. Cool for 15 minutes before removing from pan to a wire rack.
  3. Done! More delicious than what you get from Starbucks. :)
